Hello hello! How are you?
So today I’m sharing a couple of vegan cheese recipes.
For some people (me included) cheese is that one product that we “can’t live without” and there is no proper alternative, nothing comes close, and I acknowledge that. I’m not hypocritical or one of those who try to convince others (and myself) that there is something as tasty as cheese. No. I said it before, cheese “is” my chocolate (which I don’t like) and I crave it often – daily, really. But, I mean, the more environmentally conscious you get (or more aware of animal cruelty or whatever moves you – anyway, stay strong! Woohoo!), the less you will want to do whatever you used to, and in the end it all comes down to decisions. Every action you take, everything that you do or eat is a result of decisions you make. And every action is as strong as a vote. All this decision process is a message transmission mechanism of sorts, because you pass your message, your beliefs, your truth to the world, to others, to companies who sell certain products or live up to certain policies – which we approve or disapprove.
Anyway, all of this to say that yes, there is no dairy-free alternative as tasty as cheese, but that is not the end of the world, and yes, you can survive without it. I’m the living proof of that for the third year, on the second of April. Yay me!
Now, let’s talk about these recipes, shall we?
PLAIN
Ingredients
- 1 + 1/3 cup of water (this is if you want a creamier texture, whereas if you’d rather get a firmer one, use just 1 cup)
- 2 tbsp of oat flour
- 2 tbsp of sour manioc starch
- 2 tbsp of powder beer yeast
- 2 tbsp of cream (I used soya cream)
- 1 tbsp of corn starch
- 1 tbsp of olive oil
- 1 tsp of salt
- 1/2 tsp of agar agar
HERBS
Ingredients
- 1 + 1/3 cup of water (again, this is if you want a creamier texture, whereas if you’d rather get a firmer one, use just 1 cup)
- 2 tbsp of oat flour
- 2 tbsp of sour manioc starch
- 2 tbsp of powder beer yeast
- 2 tbsp of cream (I used soya cream)
- 1 tbsp of corn starch
- 1 tbsp of olive oil
- 1 tsp of oregano
- 1 tsp of chives
- 1 tsp of turmeric
- 1 tsp of powdered garlic
- 1 tsp of salt
- 1/2 tsp of agar agar
Preparation
- Whisk all ingredients in a saucepan and let it boil in low heat until it thickens.
- Transfer the mixture to a bowl (or any dish to mold the cheese) that was previously spread with olive oil.
- Let it sit and then put it in the fridge when at room temperature.
I use them on bread, on toast, on roasted sweet potato, and with everything I would use dairy cheese, really.
